In recreating these recipes, I used whole dried spices from The Spice House, and ground them as I needed them.
Whole Dry Spices
- Ceylon True Cinnamon
- Dried Ginger
- Mace Blades
- Green Cardamom seeds
- Rosemary (fresh from the garden)
Using Ceylon cinnamon will result in radically different taste than using modern cinnamon. It is well worth the effort to find it for these recipes, especially 132: A Cinnamon Tart
